Three Ingredient Pureed Cauliflower

Ingredients

6 cups cauliflower, leaves and core removed, cut into small florets

¼ cup butter or ghee at room temperature

Sea salt and/or freshly ground black pepper to taste

Parsley for garnish (optional)

 

Instructions

1. Place 2 inches of water in a vegetable steamer, and place cauliflower in the steamer.

2. Steam cauliflower until easily pierced with a fork, about 10-12 minutes.

3. Place cauliflower into a food processor, add butter (or ghee), and a generous pinch or two of sea salt and/or pepper. Process until smooth, scraping down sides of processor if needed.

4 Enjoy!
