Watermelon Salad

Ingredients

Salad:
  • 1/2 of a whole watermelon cubed
  • 1 English cucumber sliced in half lengthwise, then sliced into 1/2” pieces
  • 1 small red onion chopped
  • 1/4 cup mint leaves roughly chopped
  • 1/4 cup basil leaves roughly chopped
  • 1/2 cup dairy free feta cheese crumbles (I used follow your heart brand*)
Dressing:

Instructions

  1. In a large serving bowl or salad platter, arrange the watermelon cubes with the cucumber, onion and fresh herbs. Sprinkle all over with the dairy free feta cheese.
  2. Whisk together the dressing or place the ingredients in a small jar and shake to combine, then pour over the salad and serve right away. Enjoy!
