Ingredients
Salad:
- 1/2 of a whole watermelon cubed
- 1 English cucumber sliced in half lengthwise, then sliced into 1/2” pieces
- 1 small red onion chopped
- 1/4 cup mint leaves roughly chopped
- 1/4 cup basil leaves roughly chopped
- 1/2 cup dairy free feta cheese crumbles (I used follow your heart brand*)
Dressing:
- 1/4 cup extra virgin olive oil
- 2 1/2 tablespoons red wine vinegar or balsamic
- 1 teaspoon pure maple syrup optional
- 1/4 teaspoon fine sea salt
Instructions
- In a large serving bowl or salad platter, arrange the watermelon cubes with the cucumber, onion and fresh herbs. Sprinkle all over with the dairy free feta cheese.
- Whisk together the dressing or place the ingredients in a small jar and shake to combine, then pour over the salad and serve right away. Enjoy!
