1 ½ lb. shrimp, peeled and deveined
¼ cup coconut aminos
2 Tbsp honey
¼ cup freshly squeezed lemon juice
Zest of 1 lemon
1 garlic clove, minced
½ teaspoon fish sauce
Sea salt and freshly ground black pepper
1. In a large bowl, combine the coconut aminos, honey, lemon juice, lemon zest, garlic, and fish sauce. Add salt and pepper to taste.
2. Add the peeled shrimp to the sauce and marinate in the refrigerator for 30 minutes (no longer than 12 hours).
3. Preheat oven to 400° F.
4. Place the shrimp on a parchment paper-lined baking sheet and bake in the oven for 6-8 minutes, or until firm and cooked through.
5. Serve and enjoy!
