Shrimp with Avocado and Mango

  1. In a bowl, combine the mango, avocado, tomato, green onion, jalapeño, and lime juice. Give everything a good stir.
  2. 1 large mango,1 medium avocado, 1 medium tomato, ¼ cup chopped green onions, ½ jalapeño, 1 tbsp. fresh lime juice
  3. Melt some cooking fat in a skillet placed over medium-high heat.
  4. Paleo cooking fat
  5. Add the garlic to the skillet and cook until golden (about 2 minutes).
  6. 4 garlic cloves
  7. Add the shrimp to the skillet and cook until pink (about 5 minutes).
  8. 1 lb. raw shrimp
  9. Combine the shrimp with the mango and avocado mixture and serve with lemon or lime wedges.
  10. Lemon or lime wedges,Sea salt and freshly ground black pepper
