Autumn Salad with Apple and Pecans

Ingredients

8 cups mixed salad greens of your choice

1 cup cucumber slices, halved

1 cup apple, chopped

½ cup maple pecans

2 oz. soft goat cheese, crumbled

2 green onions, thinly sliced

3 Tbsp apple cider vinegar dressing

 

Instructions

1. In a large bowl, combine the salad greens, maple pecans, cucumber slices, chopped apple, goat cheese, and green onions.

2. Toss with the apple cider vinegar dressing, adjusting to taste.

3. Serve as a side or with roasted chicken or fish.

4. Enjoy!
